今回は千葉縣千葉市にある『杉田家千葉店』にお邪魔しました！こちらは言わずと知れた横濱の家系總本山「吉村家」創始者であり、現代のラーメン業界最後のレジェンドである吉村實が開店を直接許した數少ない直系店の一つです。また、店主が新杉田にある「杉田家」店主の津村さんの實息であることでも有名です！今回は遲い時間に伺い、店主自らが店に立つその調理場面を撮影させて頂くことができました！朝早くの活氣に負けないくらい常に店内は滿席、活氣と緊張感すら漂う雰圍氣は變わらず。そのスピリットを受け繼ぐ技、パンチとキレのあるスープ、直系にしか許されない酒井製麺の特注麺、そして豚骨スープ作りや平ザルによる麺上げなど吉村家で培われた華麗な職人技によって目の前で手際よくラーメンが作られていきます。店員の方の氣合い、お客さんへのサービス精神も半端ありません！その白熱の模樣を收めた貴重な動畫となっておりますので、ぜひご覽下さい！
＊Iekei-ramen, is a style of ramen with fatty pork-soy-sauce flavored soup with thick flat noodles. The affiliated ramen houses originating from Yoshimura-ya Ramen in Yokohama! The famous and legendary ramen shop because of the perfect originaly ramen, made from pork born and soy sauce, until then no one made.
This is one of the few direct stores that Yoshimura Minoru, the last legend of the modern ramen industry, has directly allowed to open. The store owner is also famous for his son! This time, we visited at a later time and were able to shoot the cooking scene where the owner himself was standing in the store! The shop is always full so that you can't lose the vigor of the early morning, and the atmosphere of liveliness and tension remains unchanged. Skills inherited from the spirit, brilliant soup with punch and sharpness, custom-made noodles of Sakai noodles that are only allowed for direct line, and splendid craftsmanship cultivated by the Yoshimura family such as making pork bone soup and noodles with flat colander The noodles will be made neatly in front.
